Baked Parmesan Tomatoes

Ingredients:

8 medium tomatoes, about 3” diameter 1/4 c. butter softened 1/4 t. garlic powder 1 T. chopped fresh parsley or 1 t. dried 1/4 c. freshly grated Parmesan cheese 1/4 c. dried unseasoned bread crumbs pinch of salt 1/8 t. freshly ground black pepper


Directions:

Preheat the oven to 350°F. Wash and core the tomatoes and cut into quarters. Place skin side down in a 9” x 13” glass baking dish or casserole. Mix the butter, herbs, bread crumbs and seasonings. Sprinkle over the tomatoes and bake 30 minutes. Serve warm.
