Bobbies Chicken

Ingredients:

1 roasting chicken (4-1/2 lbs.) with giblets 1 lemon 2 T. dry mustard 2 T. ground ginger Salt and freshly ground black pepper 6 medium yellow onions, quartered 2 chicken boullion cubes 2-3/4 c. water


Directions:

Preheat oven to 425°F. Rinse the chicken and pat dry. Squeeze the juice of the lemon over the outside and inside of the chicken. Rub the chicken with the mustard and ginger and salt and pepper to taste. Place in a roasting pan, scatter 4 onions and the lemon halves in the pan, and roast undisturbed 30 minutes. Simmer the giblets, the remaining 2 onions, the boullion cubes and 2 c. water in a saucepan over medium heat for 30 minutes; set aside. Reduce the heat to 375°F., remove the lemon halves (squeeze their juice into the pan) and pour the remaining 3/4 c. water into the pan. Roast for 30 minutes, basting with the pan juices several times. Strain the giblet stock and add 3/4 c. of stock to the pan. Roast for 30 minutes, basting with the pan juices several times. Remove the chicken from the oven and cut into serving pieces. Mix the chicken pieces with the onions and juices in the pan and pour in the remaining giblet stock. Cover the pan with aluminum foil and bake 15 minutes. Serve with pan juices.
