Caramel Filled Chocolate Cupcakes

Ingredients:

250g butter 150g sugar/brown 180g self raising flour - sifted 90g good quality cocoa powder - sifted 4 eggs (room temp) 4-5 tbsp milk 1 tsp vanilla Handful of chocolate chips 300ml whipped cream 2 tbsp icing sugar Coffee/Cocoa powder 80g butter 80g brown sugar 80g milk


Directions:

- cream butter & sugar till light & fluffy using electric mixer - add in vanilla - add in eggs one by one & beat well - put down that mixer & add in flour & cocoa powder using a wooden spoon alternating with the milk - if it’s too dry, add in more milk - DON’T OVERMIX! will become rubbery - bake for 20 mins at 180C in a preheated oven - whip together both until peaks form - sieve over cupcakes - stir all together in a saucepan & boil til thick over low heat - add in some icing sugar to drizzle it onto the cupcake tops - cool cupcakes, open a hole (may have to take some out), fill it with caramel & close it back - spread whipped cream over - dust cocoa over top - drizzle thickened caramel
