Caramelized Pineapple Cake

Ingredients:

5 T. Sugar 6 T. flour 1/2 t. baking powder 4 egg yolks 7 T. butter (room temperature) 1 T. rum/pineapple juice 4 egg whites, whipped 5 T. sugar 1 T. water 5 T. heavy cream 1 fresh pineapple cut in 1/2” thick slices


Directions:

Mix the sugar and flour. Add the baking powder. Mix in the egg yolks, soft butter and rum and whip vigorously until smooth. With a spatula, fold in the whipped egg whites. Mix the water and sugar and simmer on medium until caramel colored. Add heavy cream and boil one minute. Pour into cake pan. Arrange the pineapple slices and pour the dough over everything. Bake in preheated 350° oven for 35 minutes. Allow to cool 20 minutes in pan, then gently invert onto serving platter.
