Cheese Latkes

Ingredients:

8 oz. small curd cottage cheese 4 eggs 2 T. sugar 1/2 t. salt 2 c. all-purpose flour 1/2 t. baking powder Butter for frying


Directions:

Place the cottage cheese in a fine mesh strainer and let drain for several hours or overnight. In a medium bowl, beat together the eggs, sugar and salt. Blend in the flour and baking powder. Stir in the cottage cheese and beat well. Cover and refrigerate 30 minutes. Heat 2-3 T. butter in a frying pan and drop in tablespoons of the batter. Brown on both sides and remove to a platter. Serve with maple syrup, jam, sugar and cinnamon, honey, etc.
