Cheese Soup

Ingredients:

1/2 stick butter 2 T. flour 1 T. fresh chopped chives 2 t. dry mustard 2 cans chicken broth 10 oz. cheddar cheese grated 1 package Boursin cheese crumbled 1 c. light cream dash of Worcestershire Sauce 1 T. medium-dry sherry salt and pepper to taste chives or croutons to garnish


Directions:

In saucepan or large frying pan with cover, melt butter over medium heat. Add flour and cook 2 minutes. Add chives and mustard and cook one more minute. Gradually add broth, then cheeses, stirring to melt. Add cream, Worcestershire Sauce and sherry. If necessary, thin with additional broth or milk. Garnish with chives or croutons. Serve hot.
