Chicken Valdostana

Ingredients:

4 large chicken breasts, boneless 1/4 lb. Fontina cheese 4 thin slices proscuitto flour for dredging 1 c. bread crumbs 3 - 4 eggs beaten 1-1/4 c. brown stock or canned beef broth 1/4 c. chianti 1/2 c. mushrooms, sautéed


Directions:

Rinse and pound chicken breasts to 1/4” thickness. Layer 1 slice of prosciutto, one slice Fontina over half of each chicken breast. Fold the other half over the stuffing. Dip the stuffed breasts into flour and then the egg, then coat well with bread crumbs. Brown in butter in a sauté pan. Transfer to a covered baking dish and bake 10 minutes in preheated 375° oven. Heat the brown stock and chianti over low heat until slightly reduced. Add mushrooms. Pour sauce over chicken breasts and serve.
