Chili Chicken

Ingredients:

2 T. fresh lemon juice 1 heaping T. granulated garlic 1 heaping T. granulated onion 1 T. plus 3/4 t. freshly ground white pepper 3 T. paprika 2 T. kosher salt 1/8 to 1/4 c. red chili flakes 1/2 c. olive oil 1 chicken cut into 8 pieces


Directions:

Combine lemon juice, garlic, onion, pepper, paprika, salt, chili flakes and olive oil in a large bowl and whisk to blend into a paste. Add chicken pieces and coat thoroughly on all sides. Marinate at least one hour, preferably overnight. Turn pieces occasionally. Heat oven to 400. Arrange chicken in a single layer on a foil-lined baking sheet and roast 30 minutes. Reduce oven to 300 and cook 20 minutes until skin is crisp.
