Corn Soup with Chiles and Lime

Ingredients:

1 T olive oil 2 c fresh corn kernels or 10 oz. frozen, thawed 1 T minced garlic 1 T minced fresh chile peppers 1 T cumin seeds toasted in a sauté pan for 2-3 minutes 1 q chicken stock Salt and pepper 1 small red onion, diced fine 1/4 c chopped fresh cilantro 2 limes, halved


Directions:

In a 4-quart saucepan, heat the oil over medium heat until hot but not smoking. Add the corn and sauté, stirring occasionally for 5 minutes. Add the garlic, chiles and cumin. Sauté, stirring occasionally for another 2 minutes. Add the chicken stock, bring to a boil, turn heat to low and simmer 30 minutes. Season to taste with salt and pepper and pour into 4 bowls. Add 1/4 of the onion and cilantro to each bowl. Squeeze a lime half into each bowl and serve.
