Devilishly Good Roasted Chicken

Ingredients:

2 chickens quartered 2 onions halved lengthwise and slivered 1 T. finely minced garlic 2 T. unsalted butter 2 T. olive oil 2-1/2 T. Dijon mustard 2 t. Worcestershire sauce 1-1/2 t. Tabasco sauce 1 t. chili powder 1/2 t. paprika pinch of salt 2/3 c. chicken broth


Directions:

Rinse the chicken pieces well and pat dry. Place in a bowl and toss with the onions and garlic. In a small saucepan, heat the butter and the oil. Whisk in the mustard, Worcestershire, Tabasco, chili powder, paprika and salt. toss the mixture with the chicken, onions and garlic and marinate overnight in the refrigerator. Preheat the oven to 375°F and bring the chicken to room temperature. Place the chicken in a shallow roasting dish, covering with the onions. Pour the broth into the bottom of the pan. Place the pan in the center of the oven, reduce the heat to 350°F and roast, basting frequently, about 1 hour. Defat the pan juices and serve with the chicken.
