Egg and Bacon Sammies

Ingredients:

2 English muffins, halved 6 eggs 4 strips bacon (unlimited) 1/2 cup shredded cheese, cheddar 1/4 cup milk 2-3 shallots, minced 1 tsp of cinnamon 3 tbsp butter salt pepper oregano


Directions:

1. place bacon in a medium to medium low pan and begin cooking slowly 2. once bacon is crispy, remove and reserve the bacon, drain majority of grease, leaving a very thin coat in the pan, add shallots and brown 3. add 1 tbsp of butter and 4 eggs, cooking them sunny side up 4. add 2 eggs to a bowl, beat and add milk and cinnamon, mix well, dip and briefly soak muffins in egg and milk mixture, add butter to a large pan and cook muffins until golden brown both sides 5. once egg whites are solid and egg yolks are almost solid add cheese over the eggs, cover and melt the cheese 6. remove cover and separate eggs, top each cheesy egg on a muffin slice with bacon in between, sprinkle with oregano and serve. makes 4 sammies, so share with friends.
