Fennel and Potato Soup

Ingredients:

3 oz. potato head of fennel 1 spanish onion 3 oz. flour 3 oz. butter 2 c. chicken stock 2 c. milk 1 c. white wine 1 bay leaf pinch of marjoram chopped chives salt and freshly ground black pepper


Directions:

Melt the butter in the pan and add the potato, fennel and onion and cook gently until onion is translucent. Stir in the flour and cook 3 minutes, stirring continuously. Add the milk, bring to a boil, add the wine and stock. Add the marjoram, chives and bay leaf. Simmer until the vegetables are soft. Adjust the seasonings and serve.
