French Potato Pie

Ingredients:

1 lb. cottage cheese 2 c. mashed potatoes 1/2 c. sour cream 2 eggs 2 t. salt 1/8 t. cayenne pepper 1/2 c. scallions, sliced 10” unbaked pastry shell 3 T. Parmesan cheese


Directions:

Preheat oven 425°F. Put cottage cheese through a food mill to make it smooth. Beth the mashed potatoes into the cottage cheese. Beat in the sour cream, eggs, salt and cayenne pepper. Stir in scallions. Spoon into pastry shell. Sprinkle with grated cheese. Bake for 50 minutes until golden brown. Serve cold the following day.
