Garlic Marinated Zucchini Salad

Ingredients:
1 lb. zucchini 1 large carrot 1/2 c. olive oil 1/4 c. wine vinegar 1/4 c. minced parsley 1 t. dried basil 1/2 t. salt 3 cloves garlic, minced
Directions:
Cut zucchini and carrot into 3” x 1/2” strips. In a glass or ceramic bowl, mix the oil, vinegar, parsley, basil, salt and garlic. Add the vegetables and toss to coat thoroughly. Refrigerate 3 hours. Drain excess dressing and serve separately.
