German Potato Salad

Ingredients:

9 potatoes 6 slices bacon 3/4 c. chopped onion 2 T. all-purpose flour 2 T. sugar 2 t. salt 1/2 t. celery seed 1/8 t. black pepper 3/4 c. water 1/3 c. white vinegar


Directions:

Bring a large pot of salted water to the boil, add the potatoes, and cook until tender but still firm, about 30 minutes. Drain, cool, and slice thin. Cooke the bacon in a deep skillet until brown, drain, crumble and set aside, reserving the fat. Saute onions in the bacon fat until golden. In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper. Add to the sauteed onions, and cook and stir until bubbly, then remove from heat. Stir in water and vinegar, return to stove, and bring to a boil, stirring constantly. Boil and stir 1 minute. Carefully stir in bacon and potatoes, mixing gently until everything is coated and heated through.
