Ginger Glazed Carrots

Ingredients:

1 lb. carrots, cut on the bias 1/4” thick 1 oz. (2 T.) unsalted butter kosher salt 1 c. good quality ginger ale 1/2 t. chili powder 1 T. freshly chopped Italian parsley


Directions:

In a large saute pan over medium heat, combine the carrots, butter, a pinch of salt and the ginger ale, cover and bring to a simmer. Once simmering, uncover, stir, reduce heat to low, cover and cook 5 minutes. Uncover, add the chili powder, and turn the heat to high. Cook, tossing occasionally, until the ginger ale is reduced to a glaze, about 4-5 minutes. Pour into a serving dish and glaze with the parsely
