Glazed Brisket

Ingredients:

4-5 lb. brisket 1 onion thinly sliced 3 cloves garlic, crushed 3-4 c. water, enough to cover the meat 1/2 c. brown sugar 1 c. apricot jam


Directions:

Place brisket, onion, garlic and water in a large ovenproof casserole with a tight-fitting lid. Cover and simmer for 1-1/2 to 2 hours, until the meat is almost fork tender. Remove the beef and strain the broth. Reserve 1/2 c. of strained broth; save the rest for another purpose. Mix the sugar with the reserved broth until it is dissolved, then add the apricot jam and mix well. Preheat the oven to 375°F. Put the brisket back in the pot, pour over the apricot mixture and bake, uncovered for an additional 45-60 minutes. Remove to a platter and cover with any remaining juices in the casserole. Let stand 10 minutes, then slice and serve.
