Goat Cheese and Garlic Spread

Ingredients:

8 oz. robiola or mild fresh goat cheese 2 t. extra-virgin olive oil 2 plump fresh garlic cloves, degermed and minced


Directions:

Take garlic cloves and slit in half lengthwise. If the garlic is fresh, it will have a barely visible green sprout. Remove. In the bowl of a food processor, combine all the ingredients and blend until smooth and silky. Spoon into a ramekin and smooth over with a spatula. Serve immediately or cover and store in refrigerator for up to three days.
