Greek Lemon-Roasted Potatoes

Ingredients:
4 lbs. (8 medium) russet baking potatoes, peeled and quartered 1/2 c. olive oil 1/2 c. freshly squeezed lemon juice (3 lemons) 1 T. dried oregano 1 T. salt 1/4 t. freshly ground pepper
Directions:
Heat oven to 500°. Place potatoes in a 10” x 15” baking dish. Add 1 c. water, olive oil, lemon juice, dried oregano, salt and pepper. Toss potatoes until well coated. Bake uncovered 50 minutes, turning halfway through and adding more liquid if it has all been absorbed. Potatoes should be fork tender and brown on the edges.
