Greek Stewed Chicken in Tomato Sauce

Ingredients:

3 lb. frying chicken, cut up Salt to taste 1/4 c. olive oil Water 35 oz. can Italian tomatoes 1 onion, chopped 1 t. dry oregano


Directions:

Salt the chicken and sauté in a large skillet. As the chicken begins to brown, add small amount of water letting the chicken cook until the water is absorbed. Remove all except 2 tablespoons of the oil. Strain the tomatoes to remove the seeds and pour over the chicken. Add the onions and oregano. Cook slowly for 45 minutes, until done.
