Honey Apricot Chicken

Ingredients:

8 chicken joints seasoned flour 2 eggs 2 T. lemon juice 1/2 c. margarine 1 7 oz jar honey 1 8 oz jar apricot jam small onion cinnamon


Directions:

Preheat oven to 375. Rinse the chicken and pat dry; coat in seasoned flour. Beat together egg and lemon juice and dip each piece of chicken in the egg mixture. Fry in the margarine until golden brown. Chop the onion fine, and mix with honey and apricot jam. Transfer chicken to a casserole and cover with apricot honey mixture. Dust with cinnamon. Bake for 1 - 1-1/2 hours until chicken is darkly colored. Serve the juice separately.
