Hot and Honeyed Carrots

Ingredients:

2 T. butter or margarine 1-1/2 lbs carrots, cut into 1” slices 1 small green chili seeded and minced 2 T; honey 3 T. lemon juice 1/3 c. water pinch of salt


Directions:

Heat the butter in a heavy saucepan. Add the carrots and cook, stirring, until they begin to brown. Add the chili and sauté another minute or so. Stir in the honey, lemon juice, water and salt. Cover tightly and cook 10 minutes, until the liquid has evaporated.
