Jerusalem Kugel

Ingredients:

2 t. salt 1 lb. capellini 1/2 c. cooking oil 3/4 c. sugar 4 eggs 1-1/2 - 2 t. freshly ground black pepper 1 t. cinnamon


Directions:

Preheat the oven to 350°F. Place 1 t. salt in 3 quarts of water and bring to a boil. Add the spaghetti and cook until al dente, about 5 minutes. Drain well and set aside in a saucepan. In a medium saucepan, heat the oil and 1/2 c. sugar. Stir constantly until the sugar turns very dark, almost black, about 10 minutes. Pour the hot caramel over the pasta immediately and mix well. Cool slightly. Combine the eggs, remaining salt, pepper, cinnamon and remaining 1/2 c. sugar and add to pasta mixture, tossing well. Transfer to a greased tube pan an bake, until the top is golden brown, 1 to 1-1/2 hours. Remove form open, turn upside down on a serving plate, unmold and serve.
