Lemon Rice

Ingredients:

2-1/2 c. chicken broth 1/2 t. salt 1 clove garlic lightly crushed 1 c. long grain rice 1 T. finely grated lemon zest 2 T. chopped fresh dill 2 T. unsalted butter freshly ground black pepper


Directions:

Heat the broth, salt, and garlic in a heavy saucepan to boiling. Stir in the rice, cover, and simmer until the liquid is almost absorbed, about 20 minutes. Remove from heat. Stir in lemon zest and lets stand, covered, 5 minutes. Remove the garlic. Gently stir in the dill and butter. Season with pepper. Serve immediately.
