Lemon Roast Chicken

Ingredients:

1 (4 lb.) roasting chicken 1 T. butter 1 t. dried tarragon Salt and pepper 1/4 c. butter 3 T. fresh lemon juice


Directions:

Wash and dry chicken. Melt butter and tarragon and put inside chicken. Season inside and out with salt and pepper. Place chicken on rack in roasting pan, breast side down. Melt butter and mix with lemon juice and brush all over chicken. Roast at 350°F. for one hour, basting every 15 minutes. Turn chicken breast side up and roast another hour, basting every 15 minutes.
