Lemon-Lime Bars

Ingredients:

2/3 c. butter, softened 1/2 c. brown sugar 2-1/2 c. flour, divided 4 t. finely shredded lemon peel, divided 6 eggs 2-1/4 c. sugar 1/2 c. lemon juice 3/4 t. baking powder 1/8 t. ground nutmeg 1 t. finely shredded lime peel 2 T. sifted confectioner’s sugar


Directions:

Prepare Candied Citrus Slices or Candied Citrus Strips. Preheat oven to 350*F. Line a 13”x9”x2” pan with heavy foil and set aside. For crust, in a large mixing bowl beat butter on medium-high for 30 seconds. Add brown sugar and beat until combined. Beat in 2 c. of flour until crumbly. Stir in 2 t. of the lemon peel. Evenly press into the bottom of prepared pan. Bake 20 minutes. Meanwhile, for filling, in a medium bowl, combine eggs, granulated sugar, remaining 1/2 c. flour, lemon juice, baking powder and nutmeg. Beat on medium 2 minutes. Stir in remaining lemon peel and lime peel. Pour over hot crust. Bake 20 minutes more or until edges are browned and center appears set. Remove to rack; cool 1 hour. Refrigerate, covered, 2 hours. To serve, sprinkle with confectioner’s sugar and garnish with candied citrus slices or candied citrust strips. Candied Citrus Slices. In a large skillet, combine 1/4 c. water and 3/4 c. sugar, bringing to a boil. Add 2 lemons or 10 key limes. thinly sliced. Simmer gently, uncovered, 1 to 2 minutes, until just softened. Transfer to rack and cool. Candied Citrus Strips. Cut strips of peel from 2 lemons or limes. With a spoon, scrape away the white pith. Cut into thin strips and cook in sugar mixture as above.
