Marinated Flank Steak

Ingredients:

1 (2 - 3 lb.) flank steak 1/2 c. sherry or red wine 1/2 c. soy sauce 2 T. Creole seasoning 2 T. minced garlic 2 T. brown sugar 1 T. tomato paste 1 t. freshly ground black pepper


Directions:

Place the flank steak in a large resealable plastic bag. In a 2-cup measuring cup, combine the remaining ingredients. Pour the marinade into the bag, seal and marinate for 4 - 12 hours. Preheat grill. Remove the steak from the marinade. Pour the marinade into a small sauce pan and bring to a boil. Lower the heat to medium-low and simmer the marinade for 10 minutes. Remove from the heat and keep warm. Place the steak on the grill and cook to desired doneness, about 6 minutes per side for rare. Transfer to a plate and let stand 5 minutes before carving. Carve across the grain into thin diagonal slices and serve with the warmed marinade.
