Marinated Goat Cheese with Sun-Dried Tomatoes

Ingredients:

2 small goat cheese logs 10 black peppercorns 2 sprigs fresh rosemary 2 sprigs fresh sage 2 sprigs fresh thyme 2 sprigs fresh oregano 4 cloves garlic 1 c. sun-dried tomatoes in oil, quartered, reserve oil 1-2 c. olive oil 1 baguette sliced thin


Directions:

In a 1 quart glass bowl, alternate layers of 1/2” slices of goat cheese with peppercorns, rosemary, sage, thyme, oregano, garlic, and sun-dried tomatoes. Add olive oil to cover and 1 T. oil reserved from the tomatoes. Refrigerate overnight. Bring to room temperature before serving with baguette slices.
