Marinated Mushrooms

Ingredients:

1 lb. small button mushrooms or 1 lb. large mushrooms, quartered 1/2 c. corn oil 1 c. red wine vinegar 2 cloves garlic, crushed 1/4 t. freshly ground black pepper 1 small pimento, chopped fine (from a jar) 1 small onion, chopped very fine 1/4 t. dried oregano


Directions:

Bring a quart of lightly salted water to a boil. Add the mushrooms and reduce the heat to a simmer. Simmer 3 minutes and drain. In a bowl mix together the oil, vinegar, garlic, pepper, pimento, onion and oregano. Add the mushrooms and toss well. Marinate for several hours or overnight. Serve at room temperature.
