Mashed Potatoes with Roasted Garlic

Ingredients:

5 heads of roasted garlic 2-1/2 lb. russet potatoes, peeled and quartered 6 T. butter 1 c. whole milk Salt and freshly ground pepper


Directions:

Peel the garlic cloves, put them in the work bowl of a food processor and process in short spurts in order to obtain a puree that still has visible chunks of roasted garlic; set aside. Boil the potatoes in a large pot of salted water, about 15 to 20 minutes. Remove from heat, drain well, and mash thoroughly with a potato masher. In a small saucepan combine the pureed garlic with the butter and milk and warm gently over medium heat, stirring once or twice. Whisk the garlic mixture into the potatoes, adjust the seasonings with salt and pepper.
