Mocha Butter Cream

Ingredients:
6 1 oz. squares semisweet chocolate 1 c. heavy cream 2 egg whites 1/3 c. powdered sugar 1 T. instant espresso powder
Directions:
Melt chocolate over low heat or in microwave oven until smooth when stirred; set aside and let cool. In a medium bowl, wihp cream with an electric mixer on high speed until stiff. In a separate medium bowl with clean, dry beaters, beat egg whites on high unitl stiff but not dry. Beat in powdered sugar and espresso powder until blended. Fold in melted choloclate unitl well mixed; then flol in whipped cream. Cover and refrigerate until chille and spreadable.
