Mom’s Hot Water Sponge Cake

Ingredients:

1 c. sifted flour 1-1/2 t. baking powder 1 c. sugar 1 T. vanilla 1/4 t. salt 3 eggs separated 6 T. hot water


Directions:

Beat egg whites until stiff. Sift flour, baking powder and salt. Beat yolks until thick, add sugar, then hot water, vanilla, and flour mixture. Fold in beaten egg whites. Pour into greased 10” round pan and bake at 350° (325° if adding a glaze for an upside down cake) for 30-40 minutes. Top should be light brown.
