Peach Cobbler

Ingredients:

4 c. peeled sliced peaches 2 c. sugar, divided 1/2 c. cold water 8 T. unsalted butter 1-1/2 c. self-rising flour 1-1/2 c. milk


Directions:

Preheat oven to 350°F. Combine peaches, 1 c. sugar and water in a saucepan and mix well. Bring to a boil and simmmer for 10 minutes. Remove from heat. Put the butter in a deep baking dish and place in oven to melt. Mix remaining 1 c. sugar, flour and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring syrup over top. Batter will rise to top during baking. Bake 30 - 45 minutes.
