Peaches Stuffed with Amaretti Cookies

Ingredients:

1-1/2 oz. amaretti cookies, crumbled fine 3 ripe firm peaches, halved and pitted 3 t. sugar 3 t. unsalted butter 2 c. fresh whipped cream


Directions:

Preheat oven to 375°F. Butter the bottom of an 8” baking dish and set aside. Using a melon baller, clean out the red flesh from the center or each peach. Arrange the peaches cut side up in the baking dish. Fill the center of each peach with the cookie crumbs, sprinkle 1/2 t. sugar over each, and dot each with 1/2 t. butter. Bake unitl the peaches are tender and the filling is crisp on top, about 30 minutes. Serve warm with whipped cream.
