Pepper-Crusted Steaks with Garlic Mash

Ingredients:

2 heads garlic, top quarter-inch sliced off 4 T. extra virgin olive oil 1/4 c. kosher salt 1/3 c. coarsely ground tellicherry or other peppercorns 4 8- to 10-ounce top loin, rib-eye or other high-quality steaks 2 T. fresh thyme 4 slices toasted crusty bread


Directions:

Place garlic on foot-long sheet of foil. Pour 2 T. olive oil over garlic, then wrap foil tightly around. Place in 300° oven, and roast for an hour, until soft. Preheat broiler. Blend salt and pepper and rub over all sides of the steaks. Place on greased broiler pan and broil until done, about 5 minutes a side for medium rare. Remove from broiler and cover loosely with foil tent and allow to rest 5 minutes. Squeeze garlic out of skins into small bowl. Add remaining olive oil and thyme and salt and pepper to taste and mix well. Spread garlic mash over toast, and top with steak. Serve immediately.
