Petti De Pollo Alla Bolognese

Ingredients:

2 chicken breasts, skinned and boned Salt and Pepper to taste Flour 3 T. butter 2 T. oil 4 thin slices Prosciutto 4 thin slices Fontina, Mozzarella or Swiss cheese 2 t. grated Parmigiano cheese 2 T. chicken stock


Directions:

Carefully slice each breast in half to make 4 thin slices. Place between 2 sheets of waxed paper and pound to flatten. Dip in seasoned flour and shake off excess. In a heavy skillet brown chicken in butter and oil. Transfer to shallow buttered baking dish. Place a slice of prosciutto and slice of cheese on each piece of chicken. Sprinkle with grated cheese and dribble chicken stock over top. Bake at 350°F. for 10 minutes until cheese is melted.
