Pineapple Upside Down Cake

Ingredients:

1-1/4 c. all-purpose flour 1-1/4 t. baking powder 1/4 t. salt 1/2 c. butter 3/4 c. suigar 1 egg well beaten 1/2 c. pineapple juice 1 t. vanilla extract 1/2 c. brown sugar


Directions:

Sift dry ingredients. Cream half the butter and the white sugar. Add the egg; mix well. Combine juice and vanilla. Add alternately with dry ingredients, mixing thoroughly after each addition. Combine brown sugar and butter over medium heat for 4 minutes. Add the pineapple and saute for a few more minutes. Pour sauce into baking pan and arrange pineapple slices. Pour over batter. Bake in a 9” pan for 45 minutes at 350°.
