Pork Chops and Sweet Potatoes with Hard Cider

Ingredients:

2 T. butter 4 pork chops, 1” thick, well trimmed Salt and pepper to taste 4 medium sweet potatoes, peeled and very thinly sliced 1/2 t. ground allspice 2 T. brown sugar 1 c. hard cider


Directions:

Preheat oven to 375°. Melt 2/3 of the butter in a skillet over medium heat. Season pork chops with salt and pepper and brown well over medium heat, about 3 or 4 minutes each side. (Don’t crowd the skillet or the chops won’t brown correctly.) Meanwhile, grease a casserole with the remaining butter. In a bowl, toss potatoes, allspice, brown sugar, and salt and pepper to taste. Layer on the bottom of the casserole. When chops are browned, place them on the potatoes. Pour out fat from skillet and add the cider. Raise heat, boil for a few minutes and scrape the bottom of the pan. Pour over chops and bake 30 minutes until potatoes are tender.
