Pork Chops Valenciana

Ingredients:

4 thick-cut loin pork chops 1 T. olive oil 1 large clove garlic, minced 1 red onion, chopped 2 plum tomatoes, diced 4 hot or sweet cherry peppers from jar (1/4 c. juice reserved) 2 t. fresh rosemary or 1/2 t dried 1/4 c. chicken broth 1/4 c. beef broth


Directions:

Season pork chops with salt and pepper. In a large, deep skillet, brown chops on both sides in oil. Add garlic and onion. Cook 3 minutes over medium heat, stirring. Add tomatoes, peppers and juice, rosemary and both broths. Cover and simmer until chops are tender, 25-30 minutes.
