Ingredients:

3 c. hot or warm mashed potatoes (from 2-1/2 lbs. russets) 1/4 c. minced white onion 2 T. minced scallions, trimmed to include 1” green 2 T. melted butter Kosher salt and freshly ground pepper


Directions:

In large bowl, combine potatoes, onion, scallions, butter, salt and pepper to taste. Blend well and taste for seasonings.
