Potato Barley Soup

Ingredients:

1/4 c. corn or vegetable oil 1 large onion, diced 2 stalks celery, dice small 4 cloves garlic, crushed 3 quarts beef or chicken broth 1/2 c. pearl barley, rinsed under cold water 2 carrots peeled and diced 2 large Idaho potatoes, peeled and diced small 1/4 t. pepper Salt to taste


Directions:

Heat the oil and saute the onion, celery and garlic until the vegetable start to turn translucent but not brown, about 10 minutes. Add the broth, barley and carrots. Simmer gently, stirring from time to time, for an hour. Add the potatoes and continue simmering about another hour, until the barley is tender. If the soup gets too thick, add more broth or water. Add salt and pepper to taste. Serve hot.
