Potato Cheese Soup

Ingredients:
3 c. leeks sliced 4 c. potatoes peeled and sliced 8 c. water Salt and freshly ground black pepper 1 t. Dijon mustard 1 c. grated cheddar cheese 1/2 c. heavy cream
Directions:
In a large pot melt butter. Add leeks and cook over medium heat stirring occasionally. Add potatoes and season with salt and pepper. Add water and bring to simmer. Cook until vegetables are tender. Put 3/4 soup in blender and puree, return to pot and bring to simmer. Add mustard and cheese and stir until smooth. Add cream and bring to simmer. Pour into bowls and serve.
