Ingredients:

6 medium potatoes 1 medium onion, diced 2 T. corn oil 4 eggs, lightly beaten 2 t. salt 1/4 t. freshly ground black pepper Corn oil for frying


Directions:

Peel and slice the potatoes and boil them in salted water to cover until fully cooked. Drain and mash. Saute the onion in the corn oil until golden brown. Mix the onion into the mashed potatoes. Let the mashed potatoes cool, then stir in the eggs, salt and pepper. Heat about 2 T. oil in a heavy frying pan. Drop the mashed potato mixture a tablespoonful at a time into the hot oil. Fry until golden brown on each side and remove to a paper towel to drain. Serve while still warm.
