Potato Galette with Goat Cheese

Ingredients:

1 lb. baking potatoes peeled and thinly sliced 1/4 c. clarified butter salt 2 oz. shredded mozzarella 2 oz. fresh goat cheese


Directions:

Preheat the oven to 450°F. Put the potato slices in a medium bowl, pour the clarified butter over them, season lightly with salt, and toss lightly to coat. Arrange half the potatoes, overlapping like a flower, in a nonstick 9” oven proof skillet. cook over medium heat until the edges begin to brown and the potatoes begin to stick together, about 10 minutes. Sprinkle evenly with the mozzarella and dot with the goat cheese and cover with the remaining potatoes. Transfer the skillet to the oven and bake 10 minutes. Remove from oven, invert the galette in the skillet and cook on the stovetop, 5 to 7 minutes more. Return to the oven and finish cooking in the oven 5 minutes more.
