Potato Ham Bake

Ingredients:

1 lb. Yukon Gold Potatoes 1 8 oz. tub of cream cheese and chives 3/4 c. milk 1/4 c. finely grated parmesan cheese 1 T. fresh tarragon or 1/2 t. dried, crushed 8 oz. cooked boneless ham, cut in bite-sized slices


Directions:

Preheat oven to 400F. In a medium saucepan cooke the potatoes, covered, in lightly salted boiling water 5 to 7 minutes, just until tender. Drain and set aside. Combine the cream cheese, milk, 2 T. parmesan cheese and pepper in a saucepan over medium heat and whisk until smooth and the cheese is melted; stir in tarragon. Layer potatoes, ham and sauce in 1-1/2 quart baking dish. Bake covered, 20 minutes. Uncover, sprinkle with remaining parmesan, and bake 10 to 12 minutes. Let stand 5 minutes. Top with freshly grated black pepper.
