Potatoes in Red Wine with Rosemary

Ingredients:

1 lb. new potatoes 1 T. olive oil 4 oz. chopped onion 1 T. freshly chopped rosemary 1/2 c. dry red wine 2 T. red wine vinegar Salt and pepper


Directions:

Scrub potatoes and slice in food processor. Heat nonstick skillet very hot. Reduce heat to medium high. Add oil and cook potatoes, turning frequently until brown on all sides. Add chopped onions as the potatoes cook. Add rosemary. When potatoes are brown, reduce heat to simmer. Add the wine and vinegar and season with salt and pepper. Cover and cook until potatoes and onions are soft.
