Red Onion and Blue Cheese Spread

Ingredients:

1/2 c. extra virgin olive oil 1/2 c. chopped red onion 1/2 c. chopped toasted walnuts 1/4 c. pitted and coarsely chopped kalamata olives 1 large clove garlic, minced 1/2 c. crumbled blue cheese Freshly ground black pepper and salt 1 French bread baguette 1 bunch sweet grapes


Directions:

In a small saucepan over medium heat, gently warm the olive oil with the onion, walnuts, olives and garlic. Do not bring the olive oil to a boil. Remove from heat and cool for a moment. Place the blue cheese in a serving bowl, then pour the warm oil mixture over the cheese and stir gently. Add pepper to taste, then let the mixture cool to room temperature. To serve, arrange the toasted baguette rounds and the grapes on a platter around the spread. To toast the nuts, spread them in a single layer on a baking sheet and toast in a 350° oven until lightly golden, about 4 minutes.
