Red Onions, Walnuts, Cheese and Sage

Ingredients:

1/2 c. shaved Parmesan cheese 1/3 c. extra-virgin olive oil 1/2 c. coarsely chopped red onion 1 c. coarsely chopped walnut meats 2 T. chopped fresh sage 2 garlic cloves, slivered Freshly ground black pepper


Directions:

Cut slivers of cheese with vegetable peeler and place in medium-sized mixing bowl. Over low heat, heat olive oil in small saucepan. Add onion, walnuts, sage and garlic. Toss for 2 minutes. Pour over cheese. Gently toss until mixture cools. Add pepper to taste. Serve at room temperature.
