Roasted Garlic Mashed Potatoes

Ingredients:

2-1/2 lbs. baking potatoes cut into 1-1/2” to 2” chunks salt 1/4 lb. unsalted butter at room temperature cut into small pieces 1/2 c. heavy cream 1/2 c. roasted whole garlic puree Freshly ground white pepper Freshly grated nutmeg 1 T. chopped parsley


Directions:

Put the potatoes in a saucepan with enough lightly salted cold water to cover well. Bring the water to a boil over high heat, then reduce the heat slightly and simmer briskly until the potatoes are fork tender, about 15 to 20 minutes. Drain well and mash. Heat the butter and cream in a small saucepan until the butter is melted. Add the mixture and roasted garlic to the potatoes and stir until fully incorporated. Season with salt pepper and nutmeg. Garnish with parsley.
