Roasted Garlic Peppers

Ingredients:

1/4 c. corn or olive oil 2 cloves garlic, crushed 1/4 t. salt 4 red bell peppers 2 green bell peppers


Directions:

Preheat oven to 375°F. Line a baking sheet with tin foil. In a small bowl combine the oil, garlic, and salt and mix together. Cut the peppers in half lengthwise, remove the core and seeds, and cut into 1” strips. Dip each strip in the oil mixture, and place skin side up on the baking sheet. Roast 20-30 minutes, until the edges begin to blacken. Serve hot, cold or at room temperature.
